Sourdough is a type of bread made through natural fermentation. Instead of using commercial yeast to leaven the dough, sourdough relies on a starter—a mixture of flour and water teeming with naturally occurring wild yeasts and lactic acid bacteria. These microorganisms ferment the carbohydrates in the flour, producing carbon dioxide, which gives the bread its rise, and lactic acid, which contributes to its tangy flavor and improved shelf life.
The process of making sourdough dates back thousands of years and was the primary method of breadmaking before the advent of commercial yeast
